The afternoon tea set promises not merely altitude but attitude too, with memorably inventive flourishes that rise above the typical high-tea tropes. Instead of pushing out basic curry puffs and cliched pastries, the Banyan Tree team has crafted its own unconventional specialities, kicking off with the visual beauty of a lobster cone with rosemary coral crisp and garden herb garlic tuile, setting the tone for elegantly elaborate courses that thrill both the eyes and the taste buds.
A slew of savoury tidbits surface one by one, enabling guests to slowly devour each delicacy without feeling hurried, at the ideal pace for an afternoon of companionship with loved ones. Every offering is a conversation piece in its own right, from the roasted beef sandwich with horseradish sauce to the pancake-coated foie gras with Banyuls shallot, the beetroot macaron with house-cured Atlantic salmon with dill and sour cream to the sea urchin cream with Granny Smith apples and shaved bottarga to the curry cappuccino with crab meat grissini, ginger and lemongrass (no fear; each person receives an individual serving).
Sweets emerge in triumphant tiers to share, making for a meticulously composed marvel worthy of Wonderland. Dive into (deep breath!) raspberry-and-violet mousse cakes with 35 percent glazed white chocolate; passion fruit mousse with mango jelly and green tea sponge; vanilla pastry cream with fresh strawberries and chocolate meringue almond sponge; cherry mousse with cherry jelly and sea salt chocolate sable; pistachio macaron with chocolate garnish; choux pastry with teh tarik pastry cream, chocolate hazelnut and gianduja molten heart; and a duet of classic plain scone and fruity cranberry scone, served with authentic clotted cream and a house-made fruit jam of the day; satisfyingly topped off with dark chocolate shaped into a completely edible banyan tree - all meant to be appreciated with your choice of premium tea, naturally.
