Qatar might be an increasingly modern nation, but you'll still find centuries-old recipes served in its capital, Doha, including pacha - boiled sheep's head, stomach and trotters, served with bread sunken in hot, oily broth and more flatbread on the side. The cheeks and tongues are considered the best bits.
