Near walls that showcase shelves of sake bottles and carafes, customers can watch the experienced chefs confidently preparing their meals in the open kitchen.
Juu Nana Sakaba's show-runners have long specialised in ramen - this Ooki Chashu Ramen is casual and cheerful, fuss-free and fulfilling, featuring the restaurant's signature torched pork belly slab, chunky and lusciously layered with flesh and fat, complemented by collagen-rich, slow-simmered tonkotsu pork bone or tori paitan chicken broth.
