Bangsar’s new La Stellar Maison fuses Malaysian flair with French and Italian finesse for tasty transformative takes on familiar favourites.
The Baaah Kut Teh Pasta is a claypot of comfort, bringing together house-rolled tagliatelle, eggy and smooth, with tender lamb, generously portioned in robustly savoury gravy with a mellow herbal sweetness. Fun fact: The BKT base is from a family recipe by the grandmother of La Stellar Maison’s chef-founder.
The Borneo-meets-Bologna risotto is simmered with Sarawak’s finer-grained Bario rice, al dente nonetheless, topped with a Sabah king tiger prawn, mighty and meaty in briny bisque sauce.
The Umai Tuna is inspired by the Malaysian Melanau equivalent of ceviche - tuna marinated potently with onions and citrus juices, bolstered by budu for a Kelantanese fermented umami kick to spike the spicy wallop of chillies, swimming in slick extra virgin olive oil.
