Whey to go: KL’s new ricotta specialist serves terrific toasts slathered with fresh, creamy-soft cheese. Cotta’s founder Ivan and his team simmer and strain their ricotta every morning, for delicious dairy delight in Damansara Heights.

Cotta currently offers three varieties of ricotta toast.
Start with the Classic (RM18), which spotlights the cheese in its whole-milk purity, scattered with walnuts and showered with local honey. Ivan has personally made ricotta at home for years, perfecting his recipe with milk, cream, lemon and salt - the result is a far cry from grainy, rubbery curd; it's the kind of luscious, lovable ricotta that'll keep customers coming back for more.
The Smoked Salmon Ricotta Toast (RM24) will be the favourite of many, perfectly proportioned with irresistibly runny soft-boiled egg, nori, sesame seeds and lemon zest - a can't-fail coupling of salmon and ricotta. Every ingredient tastes like the work of people who care about their craft, including the lightly tangy sourdough bread by a 23-year-old independent baker who's steadily mastering his skills.
The sweet pick is the Blueberry Ricotta Toast (RM22) - the cheese is a texturally satisfying base for its juicy topping of fresh berries with homemade jam and mint, a nice pick-me-up with fine coffee on a cloudy morning, with breezy melodies by Joe Hertler & The Rainbow Seekers wafting out of this friendly cafe's speakers.
Cotta will eventually open for dinner too, with temptations like ricotta lasagna in the pipeline. Beyond cheese, the cafe currently serves a beautifully rich mixed mushroom soup that's moreish to the last spoonful (RM16), with plans for steaks and more later.
